Measurement of capture efficiency of an exhaust hood in a commercial kitchen with disturbances

Abstract

From the comfort and energy saving perspectives, the capture of hood exhaust is a crucial index to determine the required ventilation rate for a commercial kitchen. This study sought to develop a measurement method of the hood exhaust capture efficiency and to assess the effects of air conditioning disturbance and human disturbance on capture efficiency. This study found that accurate measurement of the capture efficiency was possible in a kitchen laboratory equipped with an exhaust system in the ceiling as a result of proper exhaust flow rate of additional ceiling ventilation. This measurement technique was used to study the effects of disturbances. Results indicated that capture efficiency decreased as a result of human disturbance. Thus, the ventilation rate for a commercial kitchen should be stipulated by taking into account the decrease in capture efficiency due to human disturbance.
