Development of a ventilation control system for a commercial kitchen

Abstract

This study aims at verifying the energy-saving effect, thermal comfort, and ventilation effectiveness by introducing the ventilation control system in a commercial kitchen. We measured the effects of ventilation control system in a commercial kitchen in summer. The data indicated that the fan consumed less energy, resulting in a net energy-saving effect while not significantly affecting thermal comfort. We reproduced the observations through CFD simulations to analyze ventilation effectiveness and contribution to the thermal environment. The results indicated that indoor air quality was maintained even when a ventilation control system was introduced.
